My husband and I moved to Spain from Texas in July 16, 2016. What should we put as State of Residence since we lived in Texas for more then 183 days in 2016?

In the Personal Info section for resident state you would use Foreign or US Possession located at the bottom of the state dropdown list.  You would indicate that you lived in another state in 2016 and from the dropdown for that state choose Texas and then the date you moved to Spain.
