I have local and state taxes all over my cable, home phone, and cell phone bill. Can I include these as sales tax? I know I can't include the fees. Thanks!

No, you cannot take these cable/phone taxes as additional sales taxes under the state sales tax deduction if you are taking the general sales tax rate. You would need to claim the actual receipts in order to claim these individual taxes.
So if you are claiming the actual receipts, then your cable/phone bill would be considered your receipt for paying these state sales taxes on these purchases.
