My parents received the 2021 stimulus as I was still considered a dependent on their 2020 taxes. I am no longer a dependent for 2021 taxes and I need to know what to enter as they received the stimulus. If I put zero as the amount then it wants to send that to me, but I know they already got it. If I put I already received it and the amount for me, then will this mess up their taxes if they put the whole amount on their tax return also?

Good news! You CAN get it on your return this year and they do not have to pay it back. You do not report what someone else received for you. They only used 2020 returns to send the checks out fast but it's really based on your 2021 return.
The fact that your parents received the stimulus by claiming you last year does not affect you now. They do not have to pay it back, but if you cannot be claimed as their dependent on a 2021 return then YOU can get the $1400 recovery rebate credit yourself. When it asks if you received it you say NO. It will be added to line 30 and will part of your refund.
