My W-2 has an amount in box 14 with a description of S125 for my health insurance premiums. The premiums are not subtracted from my box 1 income. S125 is not an option when entering box 14 in TurboTax, so how do I enter this amount?

Box 14 on a W-2 is used by employers to report various types of other information. If the dropdown for box 14 does not show a description specific to the entered description in box 14 then choose Other (unclassified) and then enter the amount.
I tried that, but it doesn't appear to be subtracted from my taxable income. The health insurance premiums should be subtracted from income since they are pre-tax benefits.

It those health insurance premiums are in fact pre-tax then it is your employer's responsibility to correctly reflect your gross income in box 1 of the W-2. If that premium payment is included in box 1 then you need to have your employer give you a corrected W-2.

please see this about S125 plans. Your wages (box 1) have likely already been reduced for any portion that came out of your paycheck. Check with your employer. (not every employer use cafe 125 )
I did the math and the benefits are included in box 1.
