Your son will be reevaluated on what is filed, whether it is your return, or his return.
Claimed as a dependent on your return since he is in school full time and under 24:
If he files his own return and claims he is independent,
If you have not yet filed, there is no need to file your return. Only file his return.
If you have already filed with him on on your return, and he wants instead to file his own return, pay any taxes, and report his missing stimulus payments, then:

Yes, you can choose write a check since you already are doing Direct Pay. Selecting that means there is not any bank information in the return, that you will be handling that part separately. And since it is already handled with Direct Pay, you would be all set.
I am paying Fed Taxes, so no need to add bank account info on that form. But I am receiving a state refund and cannot seem to add the info on my state form. How can this be done?
As long as you haven't filed yet you can change your refund method.
In Step 2 in the Filing section, you should be able to add your method as shown below:
