First restart the Mac. If that problem persists then:
Corruption could have occurred in the Application or in an associated preference or support file.
The best remedy is to totally uninstall TurboTax and all associate files and then re-install. That will not delete or change any .tax2019 data file that had already been created with the tax data.
To uninstall the application and all associated files need to be deleted and then the application reinstalled. If there was a state then the state must also be reinstalled.

I was going crazy. I talked to two support specialists. neither of them had a clue on how to fix my crash problem on the Mac mini m1. than I ran across this article on deinstalling the cache. thank you whoever posted this. it works.
Just this was sufficient to get my TurboTax to stop crashing on launch (much easier than uninstall and reinstall which is more of a sledgehammer solution):
After spending a couple of hours with 4 different Intuit tech support people and an Apple support rep there was no change in the crashing right after opening--notwithstanding trashing the old program, reloading with new software and dozens of other actions like removing cookies, etc. The removal of ~/Library/Caches/KSCrash/TurboTax worked instantly!!!! Thanks so much.
