The State of Missouri no longer pays me for 2 minor children. I was their paid caregiver before the demise of their parents. I am on SSI and receive payment from survivor income of these 2 children who is in my care. Even though their survivor income is tax free also, Can I claim the portion that I receive for caregiving as income on my taxes? There is no W-2. What do I need to file showing these funds received as income?
Can I claim these children as my dependants and be the caregiver and the employee for these 2 minor children?

Your post is not clear. What is the source---exactly--- of the survivor income that is being sent for the children? Is it Social Security? If the children are receiving Social Security survivor benefits--even if the checks are payable to you for now---that is not income that you enter on a tax return. If they are getting a SSA1099 for that money, it does not get entered on a tax return until someday--if-- the child has other income like pay from an after school job, etc. and files a tax return. In that situation, the SSA1099 income would go on the child's income tax return--not on yours.
If the income is coming from some other source, please explain clearly.
In addition to answering the questions that xmasbaby0 asked, please clarify what you mean by "the portion that I receive for caregiving." Portion of what? Where does the money for caregiving come from? In what way is part of the money that you receive designated as being for caregiving? You said that you are no longer the paid caregiver.
If the children receive Social Security survivor benefits, that is not payment for caregiving.
Are you getting Medicaid waiver payments? You normally would get a W-2 for that, or a 1099-MISC. You said "There is no W-2." Did you get a 1099-MISC or a 1099-NEC?
