It depends. If you have not stepped foot in the state of NY in order to teach, then your income would not be taxed by NY, only NC. This means, if you have stepped foot in NY for your job for any reason, you would be subject to the convenience of the employer rule. (see post by Opus 17)
If you are working remotely for your convenience and not your employers convenience, again, you would be subject to NY taxes as well. However, teaching online courses would likely be for the convenience of your employer as they would not have a classroom for you to teach in and likely require you to have a home office to do your job.
If you are working remotely for the convenience of your employer, then you would not need to file a NY return, unless your employer withheld NY taxes. Then you would file to claim a refund of the taxes withheld.
All of your income, as a NC resident, is taxable to NC.
