We both won a few times resulted in completing a tax document and was given the cash at that time, we would then go and pay down our tab right away, but we still ended up paying at the end of the trip. How can we write that off as a loss rather than income?

Gambling winnings are taxable income. Losses are an itemized deduction. If you do not have enough itemized deductions to exceed your standard deduction, your losses will have no effect.
