We mailed our tax return and they were accepted. When I log into TurboTax it still shows my returns weren't accepted yet. Is there a way to change this? TurboTax online.

We originally filed electronically through TurboTax but the return was rejected. We had to mail it in to fix the issue. We received a confirmation from the IRS and CA state that our return was accepted after it was mailed in. How do I update this status within TurboTax Online?

How do I update this status within TurboTax Online?     You don't and you can't ... TT never gets any updates from the IRS when you mail in a return.   This is just like if you walk out of a tax preparer's office with a paper copy in your hand ... that paper copy will never be updated.

Once your federal return has been accepted by the IRS, only the IRS has any control. TurboTax does not receive any updates from the IRS. Your ONLY source of information about your refund now is the IRS.

You need your filing status, your Social Security number and the exact amount  (line 20 of your Form 1040) of your federal refund to track your Federal refund:

Mailed returns are not "accepted" in the way that e-filed returns are accepted, so nothing will ever show up on the TurboTax site showing that the IRS received a tax return that you mailed.  The software has no way to know that you put your tax return in an envelope and took it to a mailbox.  And if you paid your tax due, TurboTax will  never know.  TurboTax gets no information from the IRS or state after you file your tax return.  If you mail anything to the IRS or state, you should use a mailing service that tracks it-- like certified mail or UPS--- so you will know it was received.  Your only proof of paying tax you owed will be your own bank/credit card records.
