I e-filed my federal and state return.  Both returns have been accepted.  I am sending a paper check for payment on both.  Is the actual paper return required with the payment?

No just the 1040V voucher for Federal and whatever your state form.  Or you can pay the IRS ( and probably state) directly online.

You can pay the IRS directly at

    https://www.irs.gov/payments

Or here is a 1040V voucher slip

I've been using a professional service for many years.  This part is new to me.  Do I need to mail the returns, with signatures and supporting documents, at all?  Thanks.

Nope, not if they have been accepted.  Then there is nothing to mail in.  You are done.  That's the benefit of Efiling.  Just print a copy for yourself.
