Can I claim my fiancé daughter as my daughter too?

I’m claiming my fiancé as a dependent on my taxes this year as she did not work in 2017. How do I claim her daughter as a dependent or as my own child?

Did she live with you all of 2017?  You cannot claim her as your daughter, but might be able to as type "Other" dependent.

Did fiancee' have any income of any type? Alimony? Unemployment Comp?

Yes they both live with me and no income at all

Then claim both of them as dependent type Another/Other.
