If you're looking for your 2018 AGI in order to file your 2019 tax returns, and the AGI box is empty, enter $0.00 as your AGI.
I did that and then it was rejected saying that it didn't match what the IRS had on record.
The AGI was empty, but entering $0 made my return get rejected at the federal level.

The issue I run into there is the credit line and all that as I don't have any of the stuff they accept.
You should not enter anything in the box. Entering an amount means you are overriding the system. A blank AGI means zero AGI and nothing should be entered in the the AGI box.
I'll see if it lets me do that if it gets rejected again.
It doesn't let me continue if I put nothing in.

My 2020 returns were just rejected due to a non-matching AGI. It’s requesting the 2019 tax return AGI. One problem is that the IRS has yet to process my returns from last year.

Try using what you show on your copy of your 2019 tax returns for AGI in line 11. Next, you may be able to get an online tax return transcript from the IRS. Use this link.
