I have an LLC that has elected to be an S-CORP. Unfortunately, however, I e-filed form 1065 instead of 1120s. How do I "delete" form 1065 that I e-filed to the IRS? Do I simply amend form 1065 and zero everything out and then submit form1120s?

Yes. Wait until the return is accepted and amend that return. Then file the 1120-S.

I did the exact same thing. How do I go about amending the 1065 to show it should be a 1120s? I do not see how to do that in Turbo rax?

The 1065 cannot be converted into an 1120S anymore than a lion can be changed into dog.
Step 1 ... amend 1065 to show nothing ... no income no expenses
Step 2 ... complete the entire 1120S by starting all over again
