I'm consulting to a small 2-person company based in Florida. They haven't sent me a 1099 form. Followed-up with them and there was no response. How can I file taxes without this information?

If you have records for how much you received from the client, you do not need a Form 1099-NEC. You can enter the amount as cash income from self-employment.

Yes - I know exactly how much I was paid (it's all in one check). When I filed last year, I remember having to enter the 1099 per company I was consulting to, there's an option to just enter cash income from self-employment? I don't remember seeing it but I also didn't have the need last year.
In the Desktop Home & Business version, enter income as General income. You don't need to get a 1099NEC or 1099Misc or 1099K. Even if you did you can enter all your income as Cash under General. Only the total goes to Schedule C line 1.
Go to Business tab-Continue
Continue on to the Business Income and Expenses page -
Profit or Loss from Business, click Start or Update.
You should see the Business Summary page that lists your businesses. Then click EDIT by the business name and the next screen should be a list of topics,
Business Profile, Business Income, Inventory/Cost of Goods Sold, Expenses, Assets, and Final Details last.
Business Income - Click on Start or Update
In the Income section for self-employment select Other self-employed income

A company I consulted to in Florida ignored my requests for a 1099 form. I posted a month+ here on what do I do and was advised to enter it as cash income, which I have.
Today, out of the blue, I suddenly received a 1099-NEC form from them. I already submitted my tax return and it's been processed - received some refunds and paid some taxes.
Researching this online indicates that I may need to file an amended tax return. Thing is, I did enter the amount I put from the company, just not using their details (through the 1099-NEC), so the amount shouldn't change. Do I still need to file an amended tax return? If so, I filed my taxes to Federal + 6 states.. would I need to submit an amended tax return to all 6 states? How do I do that?
No you don't need to amend for that. You don't have to enter the 1099NEC even if you get one as long as you enter the total income. Only the total income goes to schedule C line 1.

I just double checked and I listed as 'General Business Income', with a description of payment from the company. Hopefully that is how I was supposed to do it!
So I won't get in trouble with the IRS since the company now reported a 1099-NEC that's not on my return...?
You don't have to literally "enter the 1099-NEC". You only need to be sure you reported the income shown on the 1099. And you apparently did that.
When you do enter a 1099, in TurboTax, nothing about that 1099 is sent to the IRS with your e-filed tax return.

You should not need to amend the returns if you reported the income with an accurate number and the amount of the tax liability did not change.
Do however, put the Form 1099-NEC with your 2022 tax records, so if there should ever be a questions, you have it available.
Yes - I saved the 1099 form. I also put a note to myself with an explanation of where I reported this, just in case I need this.
