how do i enter my fiancé so we can file jointly with our child as a dependent

you can't file jointly until the year you are legally wed and must be married on 12/31 of that year. filing jointly when you are not legally wed is a serious violation of the tax laws.
Sorry-----only couples who are legally married can file a joint tax return. If you and your GF are all living together with your child as a family, then one of you files as Single and does not enter anything at all about the child on your return, and the other one files as Head of Household and claims the child as a qualifying dependent. It is usually best for the one with the highest AGI to file as HOH. The child's SSN cannot be used on both of your tax returns---it can only be entered on one of your returns.
Does your fiancé have any income? If one of you has no income or under $4,700 then they can also be a dependent on the return like the child. But they have to live with you the whole year.
