Hello,
I had moved out of my parents' house last October (2017), and had since been living with friends in a rented house. I am currently employed in a job since September (2017), which gives me a gross earning of about $2,500/mo.
My question is whether I would need to file my own taxes, or is that still something I would leave to my parents?

Since you are over the age of 23 and your gross income is $4,050 or more in 2017, then no one can claim you as a dependent.
You will need to file a tax return if your gross income in 2017 was at least $10,350. Even if less, you should file a tax return to get a refund of the income taxes withheld from your wages, both a federal tax return and a state tax return (if your state has a personal income tax).
