How do I enter mortgage interest on a home office? I'm itemizing business deductions but I'm taking the standard deduction otherwise.

Just trying to wrap my head around "if you aren't itemizing then uncheck this box" on the Home Office step. I just want to make sure: I'm itemizing BUSINESS deductions and expenses, naturally, but this only refers to whether I'm going to take the standard deduction or itemized, in general, correct I take the standard in the end. So, uncheck this box correct?

Correct. If you don't have more itemized deductions than the standard deduction, you would uncheck the box in the Home Office section for mortgage interest.
