If I don't check the box "check this box to not print this supporting details" when I print an IRS copy it doesn't appear to print these worksheets only when I print full copy with all worksheets? Just want to confirm this is correct or trying to figure out how this works. I would like to be able to print the worksheets for my records.

You should probably choose to print (or at least save in PDF form for your records) your tax return and all calculation worksheets.
Save a PDF of the return with and without the worksheets for your records ... print only what you need to file and save a tree and a ton of ink.
