Can I deduct health insurance so it will deduct my AGI and where do I put it on the 1040?

Only if you itemize deductions and don't take the Standard Deduction.
You can only deduct the amount of unreimbursed Medical Expenses you actually paid over 7.5% of your AGI. And then all your itemized deductions have to be more than the standard deduction to get any benefit (so you would only be getting the benefit of the amount that puts you over the standard deduction). And since the Standard Deduction is increased more people will not need to Itemize.
For 2021 the standard deduction amounts are:
Single 12,550 + 1,700 for 65 and over or blind (14,250)
HOH 18,800 + 1,700 for 65 and over or blind
Joint 25,100 + 1,350 for each 65 and over or blind
Married filing Separate 12,550 + 1,350 for 65 and over or blind

If you are self-employed, you may be eligible to deduct premiums that you pay for medical, dental and qualifying long-term care insurance coverage for yourself, your spouse and your dependents.
Keep in mind that this deduction treatment also means you can’t deduct the premiums when you calculate your self-employment tax liability.
In TurboTax, you enter your self-employed health insurance premiums in the Business Expenses section of your business.
The deduction is limited to the amount of net income (profit) of your business.
Go to Business Expenses > Other Common Business Expenses > Health Insurance Premiums.
TurboTax will transfer the amount to line 29 of Schedule 1 of form 1040.
Also, For tax returns filed in 2022, taxpayers can deduct qualified, unreimbursed medical expenses that are more than 7.5% of their 2021 adjusted gross income. So if your adjusted gross income is $40,000, anything beyond the first $3,000 of medical bills — or 7.5% of your AGI — could be deductible. So health insurance can also be claimed as an itemized deduction on Schedule A
