While completing my State return in Turbotax Deluxe desktop, I skipped a question about the amount of my childrens' AGI. When I went back to input the amounts, I could no longer find the question (I looked thru all forms and attempted going thru the return again). I have 2 dependent college age kids who each had incomes < $10,000. Should I worry about not completing this question? I'm assuming that skipping the question made it appear the amounts were $0.

For your state return, to reset the question the easiest thing to do is actually to delete the return and start it over - it actually only takes a few minutes. I think you are probably talking about the California Head of Household test question but I can't be sure.
However, deleting the state will reset the question for all states and is fairly simple to do. The state will re-populate the bulk of the answers from your federal data and you will just have the state-specific questions to complete. It does not delete your primary data.
