We earned ~$4,500 in 2020 in Massachusetts as non-residents. What is the due date and do I need to file at all? I read something about making over $8,000 income that you have to file. TIA!

You saw the $8,000 on this Massachusetts webpage. In addition, that webpage states, "If you want to claim certain refundable credits, like the Earned Income Tax Credit or Circuit Breaker Credit, you must file a tax return."
In any case, the filing due date for tax year 2020 in Massachusetts is midnight, May 17, 2021, if you decide to file.
Also note that the filing limit isn't necessarily $8000 for non-residents:
"If you're a nonresident with an annual Massachusetts gross income of more than either $8,000 or the prorated personal exemption, whichever is less, you must file a Massachusetts tax return."
