Should "total tips that were 20$ per month or more" include the money I tipped out for tip-sharing, or should it be the amount of money I brought home after tip-sharing?

Include only the total amount you brought home. The employees that you shared the tips with must report those amounts from you as their own income. See: Tip recordkeeping and reporting
