which version of turbotax should i use for forms 1065 and 1120S

For a Partnership (1065) or S-Corp (1120S) returns  you will need TurboTax Business.  You can visit the following link to purchase the program: TurboTax Business.  

TurboTax will take you through an interview to prepare the business return, similar to the personal (1040) products.

One more thing, can I use it over and over or does each entity need it's own software?

The same Business product can be use for multiple business types--You can do several of each type if you wish.
