I was recently added to by fiancé’s health insurance as a domestic partner.
My portion is deducted from his pay as well as his being taxed for his employers portion. I reimburse my fiancé both portions out of pocket each month.
My own employer office HI, but the cost is more than double what I reimburse to my fiancée.
Can I claim this as a post tax deduction?

You cannot deduct money that you give to your fiancé, no matter why you give it to him or what he does with it. You are not paying health insurance premiums. The money is a gift from you to your fiancé. Gifts are not tax deductible.

Only loophole is to get married by 12/31 so you can file a joint return.
