You cannot change banking information while your return is in pending, nor can you change it after the return is accepted. The IRS does not allow it.
Obviously. Hence the comment that their walkthrough is outdated and inaccurate. Step 2 allows you to confirm your bank details, select a paper check, or split or your federal refund. The only option under direct deposit is to view your current details. There is no "see all options" under direct deposit.

Did you continue past that screen and encounter one called "Get your refund up to 5 days early." I think that's the one with the direct deposit information that can be changed.
In any case, a couple users have reported anecdotally that they experimented and chose getting paper check in the mail, then that subsequent screen non-intuitively also showed a direct deposit option where it could be updated (at least for those users.) They didn't specifically say, but possibly this just allowed them to move forward to that subsequent screen "Get your refund up to 5 days early", which had the direct deposit option under "See all options" and allowed them to update the info. They probably would have gotten to the same screen if they had just continued on in the first place.
