Every time I want to open my return Turbo tax forces me to update even though I've updated dozens of times. I filed my return months ago. I just want to check something once in a while. How can I turn this off?

Are you using the Mac or Windows version?

I "think" a Mac version of TurboTax will try to update every time it's launched unless you disconnect from the Internet. The Windows version has some update options that can be set, but I don't think there is anything like that in the Mac version. But I don't use a Mac, so I'll ask @ macuser_22 to confirm that in this thread or otherwise provide additional info on what you may be experiencing.
If it want to apply an update every time it is opened then there is probably a corrupted support file.
First try restarting the Mac. If the problem is still there then:
Corruption could have occurred in the Application or in an associated preference or support file.
The best remedy is to totally uninstall TurboTax and all associate files and then re-install. That will not delete or change any .tax2019 data file that had already been created with the tax data.
To uninstall the application and all associated files need to be deleted and then the application reinstalled. If there was a state then the state must also be reinstalled.

This is an old thread from 3 years ago. What are you doing? And what year are you referring to? If you are launching a prior-year software (such as 2022, 2021, etc.), and if it asks to update, it won't destroy any documents, but it might make changes in something if there was a change in tax law or a product update after you had filed your return.
Likewise, if you have already filed this year and are opening the 2023 software, if it asks to update, then it could change something on a form/schedule if there has been a product update that affects an item in your return. And often this time of year, there are continuing product updates going on.
If you're concerned bout it, you can always make a backup copy of your return data file prior to any updating and name it something different, such as "2023return_backup.tax2023" (or whatever year it is that you are backing up "XXXXreturn_backup.taxXXXX".)
In Windows you can configure product updates with 3 choices--1) always update automatically, 2) ask if you want to update (which you can skip), or 3) to never update (requires you to manually "check for update" whenever desired.) To configure those, open your software, and then in the top menu bar click on ONLINE then choose "Updater Preferences."
This is NOT a corrupted file problem. This has been a problem with Turbo Tax for years. Its very annoying. Since I use a MAC I cannot comment on a Windows OS.
This is a very annoying "feature" of turbotax.
