My wife and I got married towards the end of last year. We are filing jointly, but my mother in law accidentally claimed her as a dependent. My mother in law amended her forms a few days ago, we filed today and our form was rejected saying that one of us was claimed as a dependent(it wasn’t my parents claiming me - they haven’t filed yet), how long do we need to wait to file so that the info is updated?

You may have to mail your return because of what your MIL did. Her filing an amended return may not resolve the issue and you will need to wait until it's fully processed to see. It may take the IRS 20 weeks or longer to process it.
One of the other options was to resubmit with an IP pin, would that cause an issue for any parties involved?
You don't need to wait for the amended return to be processed. You will have to mail your return. Once a ssn has been used you can't efile it again.
