If you qualify as Head of Household, when you enter your filing status (single or married filing separately) into My Info, and then enter your qualifying dependent, TurboTax will offer HOH as your filing status.

You have to be eligible for Head of Household. You enter your filing status, either Single if not married or Married if you are legally married. The program will ask you question to determine if you are eligible for Head of Household status if you also have entered a dependent.
