This is the first time I am filling a tax return married filled jointly. I understand that if we do this we need to submit only ONE return where we include all out incomes, deduction, etc. (Correct me if I am wrong, please confirm if I am correct about this). I will be doing this under my account.
I am wondering if my wife logs into her Turbotax account (after I submit the taxes), will her account show that I have submitted the taxes including her? Or will it show that she has not submitted her 2021 taxes and that it's still pending, when realistically I have submitted both our returns under my account? She wants to know if she logs into her personal turbotax account and go to her "Documents" tab that it shows that taxes were filled jointly with my account.

I m going to guess that no, her account will show nothing about you filing a joint tax return under your account. Think about it, TT is just a program to help you file your taxes. It does not matter at all if TT knows about the new joint filing. They are nothing but a filing cabinet on the net for old returns. Hers will remain available for her to access if she needs to, from previous years. I would make sure she downloads electronic files or paper copies if she wants to have them. From now on, the joint tax return will be found under your login information. Technically, though, she should have access to the joint returns, so if you don't want her to have the ability to see your previous, single, tax returns, start a new account under a new username.
