I transferred two HSAs from different financial institutions to a third financial institution via a trustee to trustee transfer and did not make any withdrawls for medical payments last year. I did not get a 1099SA from any institution.
Do I need to report it at all? Do I just delete the two former HSAs from Turbotax and not include the new one? Since I don't have a 1099SA from the current institution, I don't have any of the appropriate information to include (i.e. no TIN, address, etc.)

You do not have to enter the HSA rollovers in TurboTax.
A properly executed trustee-to-trustee transfer of an HSA is neither a distribution nor a rollover and is nonreportable.
If this had been a distribution and rollover, there would have been a Form 1099-SA that would be required to be entered into TurboTax.
