I electronically filed my 1099-NEC forms at about 4pm on 1/31. 10 hours later (2am) I got an email confirming they filed on 2/1. Can I prove I filed by the deadline?

It is reasonable to assume that it takes a day or so for the form that you filed to be processed, so the confirmation you received will be sufficient.
