The IRS only uses "occupation" for statistical purposes, so put whatever you want to. It has no effect on your refund or tax due.
It would be best to list the occupation you held when most of the money was earned. However, if you changed occupations and there is something on your tax return associated with the new occupation that is unique, it may be best to list that occupation. The IRS uses the occupation to determine if your entries look normal for that occupation, so you want to list the occupation that is appropriate for what is on your tax return if you have a choice.
