The state of CO has notified me that they cannot prove that my 2017 Colorado Taxes were paid. Do you store such information in your system. If not ....What are the limitations of such storage.

TurboTax never knows how, when or even if you paid your tax due. Your only proof that you paid your state tax will be in your own bank or credit card records. Your online TurboTax account will only show that you had tax due; it will not show that you paid that amount.
One suggestion--- if you e-filed that return, there will be a page of filing instructions saved in the pdf of the return. Print out that page and see what it says there about how you were going to pay your state tax due. It will not be proof that you actually paid, but it may give you a starting point for what account to look in.
