Very niche question but I had placed a crypto sell order on Dec. 27 2020 that wasn't filled until Jan. 2 2021. Would I need to report that for 2020 or 2021 tax year?

If the entire sell order was executed on January 2nd, 2021 it should be reported on your 2021 taxes.
