We adopted 3 children in 2021 and still have a credit carryover for 2024. We then adopted 2 children in 2024. I have entered all their information but when I look at the forms I see form 8839 copy 1 of 2. Copy 2 0f 2 is not listed anywhere. What do I do?

You may not need the second page of Form 8839, as it reports employer-provided adoption benefits. If you didn't have that, you would not need that form.
I should have 2 page 1 but only have 1. There is only room for 3 children and I have 5. 3 were adopted in 2021 and 2 in 2024. I still have adoption credit carryover from the first three.
I went through the program and added 4 children. The program realized there were 2 form 8839s, one for the first 3 and one for the 4th child. I had to go into Forms mode to make it show in my return. If you are using the program online, print all forms, worksheets, etc to see if it will show. Mine was correct and would have filed properly to the IRS, it just did not want to be seen.
I can see it using the desktop version.

When I go into forms and open up 8839 both copies are there and I can print the second one. When I print out all forms for filing it is not. I am hoping it is in the file that I send in.

Use Form 8839, Part II, to figure the adoption credit you can take on Schedule 3 (Form 1040), line 6c.
Since you are using the Desktop version of TurboTax, you can go to Forms mode and look at the Schedule 3 that the program completed from your entries. Find line 6c, which will show the entire amount of Adoption Credit, click in the numerical field, then click on the magnifying glass that appears. This will take you to the worksheet where the amount was calculated and you can see whether all of the information you entered was included.
