Prior Year Charitable Contribution Carryover

I have prior year charitable carryover of appreciated assets from 2018 and 2019.  TT is using the maximum allowable itemized deduction (30% of AGI) even though I do not need so many deductions in 2021.  How can I carry this over until I need it (up to five years) without erasing the data from these prior years?

If you have a charitable carryover it is a use it or lose it situation.  If you're entitled and allowed then you have to take it.  If you don't take it then the amount that you were entitled to this year disappears.  Sorry.

Prior Year Charitable Contribution Carryover

So, for example, I have to use the carryover from 2018 in 2021, even though my taxable income goes below $0, rather than continuing to carry it to 2022 or 2023?

If you Taxable Income goes to $0 before applying the carryover, you will be able to continue to carry it over.

If it goes to $0 including the carryover, you will need to use it this year.
