I traveled to Italy for 1 month. The time was divided into 40% volunteer, 30% sightseeing and 30% self employment work. Am I able to deduct the 30% that was work related?

The 30% of self employment work was shooting stock photography and stock video footage to sell. 

If I could deduct any amount of the trip that would be helpful.

No, you can only deduct the expenses that were directly related to the cost of doing business while in Italy.  So if you had cab fair to meet with a client to sell your photos that would be deductible.  However, your flight, hotel expenses and other expenses not directly related to the cost of business are not deductible.  If you were sightseeing and taking photos at the same time, that would not be deductible.
