I had a chimney fire and a backed up septic tank this year, but when I enter the damage amount and the amount my insurance paid, it doesn't seem to change my refund

This was 2 separate incidents.  I filed insurance on one of them and paid my 1,000 deductible. I paid for my chimney repair out of pocket.  My totals didn't change at all and I am going to delete them.

If you're trying to claim the two losses as a Casualty Loss on your Schedule A, the totals may not change your refund.  This is especially true if you get reimbursed by insurance.

If it didn't change your refund, then you can delete them.
