For non-resident statement of world income, do you report foreign income that you have earned after your date of departure of Canada?

And if yes, how do you account for exchange rate in currency (i.e. USD to CAD?)

No.  If you are a non-resident and have income from non-US sources, you do not need to report the income after you leave the US on a US return.

You only need to report income as a non-resident if it is from US sources.
