So my question is that this past tax year my daughter was with her godfather so he claimed her on his taxes. But how do I change it seeing as how I have had full custody of her since January of 2021. When I try to do an ammendment its saying I can't because he already had claimed her.

Here is a link to an article that outlines the requirements to claim a child as a dependent on your tax return. Look at the section titled Qualifying child.
Your daughter would have to have lived with you for more than 1/2 of the year, in order for you to claim her as a dependent. You stated that she lived with her Godfather last year and that you did not have full custody until January 2021. So your daughter would not meet the qualifying child requirement for you in 2020.
Since her Godfather claimed her on his taxes, you cannot claim her on your taxes as well.
If your daughter does met all the requirements for you to claim her as a dependent, then the Godfather would need to amend his tax return and remove her as a dependent, then you could amend your tax return and claim your daughter as a dependent.
