I'm trying to do a 1099-R for cashing out a life insurance policy. Principal Life Insurance isn't one of the options in the drop down menu. What am I supposed to do?

If your financial institution is not in the drop down menu then click on "I'll type it in myself" and enter all of the information by keying it in by hand.
