If I studied abroad through a program at my US school, how would I state that in my taxes?

My US school is Truman State University and they had a program in which I could study in Galway, Ireland.  All of my finances went through Truman even though I studied in Ireland.

It depends.  If your school is the one located in Missouri, then it is an accredited institution for the purposes of Educational Credits.  Your expenses and scholarships will be listed on Form 1098-T.  If you did not receive that form, you will want to contact your university to ask them for a copy.

Since you are in Ireland as part of a school program, your stay in Ireland is considered a temporary absence and you remain a United States resident.  Thus, any income is taxable in the United States (it would be anyways), but you are able to claim any credits for which you may qualify, including Educational Credits.  Here is an FAQ with more information:  https://ttlc.intuit.com/replies/3301953

The fact that you were studying outside of the United States does not disqualify you from claiming the credit since the program/course is through a U.S. accredited university.  But, without the 1098-T form, the IRS will hold up your claim on the credit until it can be substantiated.
