A college student is claimed as a dependent by his parents. However, he works and pays his own student loan payments and other college expenses. Are there any credits (LLC, AOC) or deductions (student loan interest) that they can take even if they are a dependent? It seems unfair if none are available to him even though he is working and paying himself.

No.
All education benefits are claimed on the parent's return, even when the students pays his own tuition and other expenses.
It's better that way. The Parent's credit is much larger than what the student would get o his own ($2500 vs $1000 max)
