My efile status says "pending", does that mean they were sent to irs and state? To my understanding irs started accepting returns today, so were they sent today?

TurboTax does not send tax returns to the IRS or a state.  Tax returns are pulled from the TurboTax servers by the IRS and States.

Your tax returns will remain Pending until the IRS starts pulling tax returns from the TurboTax servers. It may be several days after the IRS start date before your tax return gets accepted or rejected.

The IRS has to pull millions and millions of tax returns from servers throughout the country after the official IRS start date of 02/12/2021.

So the IRS will pull these return when Turbotax customers come up in their que....Everything is waiting for the IRS to actually contact your servers for tax returns that are ready...Am I correct with this statement?

That is correct.  And this happens for every e-filed tax return from tax preparation companies and CPA's all over the country.  So if you used H&R Block, TaxSlayer, FreeTaxUSA, Jackson Hewitt or a local CPA the tax returns are all handled the same way.  The when is all based on the IRS's own processes and procedures.
