Since the returns will not be processed until mid February, can I cancel my e-filing to update it. The return has not been accepted by the IRS

No, once you e-file a return, you cannot get it back or make any changes to it. You will have to wait until your return gets accepted or rejected to make any changes.
If rejected, you can enter or change your information, then re-e-file.
If accepted, you would have to amend your return to make changes or add information.

So you already submitted (actually transmitted) an efiled return? If you already efiled a 2020 return, there is nothing you can do until you find out if the IRS either accepts or rejects the efiled return. Unfortunately, due to late tax law changes the IRS will not even open up to start processing until February 12, 2021, except for a few returns they pull early for testing purposes. In the meantime the return will sit on TurboTax servers with a "pending" status but cannot be retrieved to cancel or correct. So unless yours is one of the very few returns pulled early by the IRS, you won't know anything until February 12 or soon thereafter.
If you have errors on your return or need to add something, you would be lucky if the IRS rejects your efiled return. If they reject it, then you can simply correct everything and resubmit it. If they accept it, however, then then only way to correct it is through a formal amended return Form 1040X.
So in the meantime do NOT make any changes in your return until you find out if it's accepted or rejected by the IRS. If you end up having to prepare an amended return, it has to start out exactly as it was when originally filed.

Thank you
Did you file my taxes for 2020

This is a public user community forum, not a direct route to TurboTax Support. No one here will know anything about a specific return, but we can tell you how to check on your current 2020 return. What method did you choose to file?
Did you choose to efile the 2020 return? If so, after paying did you go all the way through some subsequent screens, provided your 2019 AGI, answered a screen with an "I am not a robot" Captcha, and to the end with a final screen with a big orange button that says "Transmit Returns Now" and clicked that? If so, and if it was successfully transmitted, you should receive an email saying the return has been submitted (also check your junk/spam folders and any multiple email accounts.) That should be followed by a second email once the efiled return has been accepted or rejected by the IRS. This year the IRS does not open until February 12, except for a few returns they pull early for testing purposes. So the second email stating if it was accepted/rejected for most people will not arrive until February 12 or in the days soon after.
Here's another way to check to see if you completed the efile process. If you used Online TurboTax, log in and look at the Tax Home. Does it show the status of your return as pending, accepted, rejected, printed, started, or something else?
If you have successfully efiled, it should say "pending" for a few more days, unless the IRS pulls your return early.
NOTE: If you chose to file by printing and mailing, TurboTax does not do that for you. If you chose that method, then you have to print, sign, and mail it yourself. It's normally better to efile if at all possible. If you chose to print and mail, but haven't done it yet, you should be able to change the method back to efile. We can tell you how.
