In filing an amended tax return (1040x), do I need to print out entire federal and state return to mail in with 1040x forms? Do I need to include my W2's as well?

No, you only need the schedules, worksheet and/or income documents (ie W-2, 1099) that was added in the 1040X. So, if you had any W-2's that were not on the original return and were added using 1040X, yes include those.
