Try to get documents from former employers. See this form.

Since 2019? TurboTax no longer provides software nor supports tax year 2019. Any refund for tax year 2019 has already been forfeited; but if you owe tax due for 2019, the IRS will still want payment with late penalties and interest.
Do you have W-2's and/or 1099's that you will need in order to file those past year returns? You mentioned a house fire but did not mention how long ago that happened. In order to file returns from 2019 onward, you need to gather up the income records needed. W-2's come from employers, so you could contact old employers to ask for copies---call them, text them, email them, write to them and snail mail them or drop in on them as needed.
Or...you can get wage and income transcripts from the IRS that will show the income reported to the IRS. Those transcripts will show federal income information and tax withheld, but will not show state information.

Or---and this would be costly----you can get copies of W-2's from Social Security:
Social Security (for a fee of $126).

If you need 1099's
There are over a dozen kinds of 1099's. A 1099NEC is typically issued by an individual or business for whom you performed work as an independent contractor, so seek a copy from them if you did not save yours. Many of the other types of 1099's are issued by banks, brokerages and other financial institutions from which you can seek copies.
You may need to seek local paid tax help with so many years of tax returns. Or...if you want to use TurboTax, you can go back as far as tax year 2020. In order to get a refund for 2020 you have to file it by April 15, 2024 or that refund is forfeited and will not be paid to you.
You cannot change the tax year. The current online program is for 2023 only. Only a 2023 return can be prepared online and only a 2023 return can be e-filed.
Online preparation and e-filing for 2020, 2021, and 2022 is permanently closed.
To file a return for a prior tax year
If you need to prepare a return for 2020, 2021, or 2022 you can purchase and download desktop software to do it, then print, sign, and mail the return(s)
https://turbotax.intuit.com/personal-taxes/past-years-products/
You may also want to explore purchasing the software from various retailers such as Amazon, Costco, Best Buy, Walmart, Sam’s, etc.
Remember to prepare your state return as well—if you live in a state that has a state income tax.
When you mail a tax return, you need to attach any documents showing tax withheld, such as your W-2’s or any 1099’s. Use a mailing service that will track it, such as UPS or certified mail so you will know the IRS/state received the return.
Federal and state returns must be in separate envelopes and they are mailed to different addresses. Read the mailing instructions that print with your tax return carefully so you mail them to the right addresses.
Note: The desktop software you need to prepare the prior year return must be installed/downloaded to a full PC or Mac. It cannot be used on a mobile device.
If you are getting a refund, there is not a penalty for filing past the deadline. If you owe taxes, the interest/penalties will be calculated by the IRS based on how much you owe and when they receive your return and payment. The IRS will bill you for this; it will not be calculated by TurboTax.
