No, you can't hold the amount of unemployment money (benefits) that you received and hold it (not report it on your income tax return) for a year. You have to file an income tax return and report the amount received in that year to avoid non-filing penalties and interest.
The IRS gets a copy of your 2020 1099-G, so will know if you do not claim it.
