My sister and I both have working teenagers. Both filing tax exempt. They will both be getting second jobs. Should we have taxes taken out of second job and leave first job at tax exempt since their first jobs are only very part time and second jobs are more money. Can we have them different statuses on two different forms. One tax exempt for one job. And then taxes taken out on the other job

Yes, you can have a different allocation/status on a W-4 with different employers.
and be careful..... the income from the first job is not 'tax exempt'.... if they make enough money when combined with the 2nd job, they will owe taxes on all the income earned....what is really occurring is they are 'exempt from withholding' because they do not expect to pay taxes.....
Just for clarification here;
Should we have taxes taken out of second job
"we" (meaning the parents) don't do anything. Since the teenagers will be required to file their own physically separate tax return if they meet the tax filing threshold, it's up to the teenagers to declare their own tax withholding.
If either of them will make more than $12K total for the year then no one should claim exempt on the W-4 ... what they need to do is claim SINGLE and ZERO allowances or ONE allowance at best on BOTH W-4 forms for both jobs.
